Carmen is named after our friend from O Cotillon. Carmen means gold, sweet, orchard. Carmen is made from grapes from all our vineyards. Mainly Jerez 90% (palomino fino) and some local varieties. This wine is full, intense in color and clear. On the palate, this wine is reminiscent of minerals. Carmen does much credit to her origins. The grapes come from sticks up to 50 years old. Destemmed, fermented with skin contact for 12 hours and then fermented cooled on stainless steel. Matured in old French wood, batoned and very gently filtered. Edition of 303 bottles. Serve at about 8 Celsius. Drink until 2026.
